I had pinned a neat idea – for colored “caramel” corn — from HERE. I had envisioned a batch of pink and purple corn, with Pink Lemonade and Grape Kool Aid. This was a GREAT idea because, when watching the sales, you can stock up on Kool Aid packets for $.05 or less!

So I tried her recipe for the pink.

What work and it took over an hour…AND I had to use both the stove and oven!
Holy hot kitchen Batman!

Final result?
Not the best.
I didn’t think it coated the corn well – as you can see.
If you remember my Big Red Popcorn, I KNEW there was a better way to do this!!
So I tweaked my recipe for the concept.
Here goes – the EASY way!
I started with 1 stick of butter, 1/4 cup white corn syrup and 1 cup sugar
Pop it in the microwave and zap 2 minutes, remove and stir.
Zap 1 more minute, until “bubbly”.
Remove from microwave and stir in 1/2 tsp baking soda and 1 packet of Kool Aid.
This will give you the pretty color – but be careful, it foams up a little bit.
Now, take a couple batches of popped corn, 16-20 cups worth, in a brown paper bag
Pour your hot mix over it, trying to stay in the center.
Roll up the bag and shake it
See how it ‘s more evenly distributed?
Now, roll it up and stick in your microwave for 1 minute on high
Remove from microwave and shake again.
See?
Better yet!
Repeat one more time — zap and shake.
Pour it out of the bag onto cookie sheets – spread it out to cool.
Simply break it apart a bit and then rip into it like monkey’s on a cupcake!
It worked.
SOOOOO much easier and in less than 10 minutes!
No heating up the kitchen, trying to stir hot candy coating over popcorn, etc.
I plan on making a new batch of the pink stuff and you will see it on Monday –
when I share the party pictures.
