Bacon Pancakes Recipe – 5 Weight Watcher Smart Points!

Pancakes and bacon, such a great combination to start the morning – better yet when you combine the two together and make it one stop treats! I saw bacon strip pancakes on Pinterest and decided that this would be a better solution for us. My recipe is a “mock” buttermilk, using the vinegar to sour the milk…it’s easier than having butter milk on hand. Only 6 Smart Points Per Serving!
Bacon Pancakes
Ingredients:
- 3/4 cup milk
- 2 T white vinegar
- 1 cup flour
- 2 t white sugar
- 1 t baking powder
- 1/2 t baking soda
- 1/2 tsp salt
- 1 egg
- 2 T butter, melted
- 3-4 strips cooked bacon, diced
Add the vinegar to the milk in a bowl, set aside. Combine all the dry ingredients in a different, larger bowl. Add the egg and butter to the milk mix, stir to combine. Combine the wet and the dry mix, until there are no lumps.
Use 1/4 – 1/2 cup of batter on a hot griddle, sprinkle cut bacon on top. When the bubble start to appear, flip the pancakes to finish cooking.
I like to serve these babies upside down so you can really see the bacon — and then rip into them like a monkey on a cupcake!
