What can I do with broccoli stalks?

If you only want the florets of the broccoli for the salad, that leaves the stalks! We are thrifty people so don’t throw them out – they will make a great cream of broccoli soup! You can grate them to make broccoli coleslaw, or even cut them into strips and add them to your stir fry! It’s another great way to stretch meat, but adding a bunch of veggies and serving it over rice!

Finely chop the red onion, and place it in a large mixing bowl with the broccoli. Cook and crumble bacon into small bits and add to the bowl. Add the rest of the dry ingredients and mix well.

In a small bowl, mix mayonnaise with sugar until sugar is dissolved. Add the dressing to the mixing bowl with other ingredients and stir well, until everything is coated in the delicious dressing.

Eat right away or keep it in the refrigerator until you’re ready for dinner. This recipe is quick and easy to whip up and stays good for up to 3 days in the fridge.
