My new addiction? Sheet Pan Dinners! What could be bad about having one dish to wash that has the entire dinner on it? OK, I cheat with this to cook pasta and add at the end, but this Chicken Parmesan Sheet Pan Dinner is totally the bomb!
6-8 (6 oz) boneless chicken breast
1 1/2 C italian panko bread crumbs
1/2 C grated parmesan cheese
pinch of salt and black pepper to taste
2 large eggs, lightly beaten
4 TBSP olive oil
2 C of marina sauce
1 1/3 C shredded mozzarella cheese
2 boxes of Spagetti noddles
2 cans of fire roasted tomatos
1 small bunch of chopped basil leaves
large cookie sheet
Preheat oven to 400 degrees
Spray cookie sheet with pam spray
In a large bowl, combined the panko bread crumbs and parmesan cheese as well as the pinch of salt and pepper.
Use a spoon and mix to combine
Drizzle 2 TBSP of olive oil into the mixture and mix until combined.
In a medium bowl, lightly mix the eggs
Using one piece of chicken at a time, dredge the chicken into the eggs and then coat the chicken into the bread crumb mixture
Place the chicken onto the foil lined baking sheet
Repeat the steps with the remaining chicken breasts
Place chicken into the oven for 20-25 minutes or until lightly brown and chicken is fully cooked.
While chicken is cooking, cook your spagetti noodles.
Once chicken is done, spread marinara sauce onto the middle of the chicken, sprinkle with mozzarella cheese
Place back into the oven for 5 minutes or until cheese is melted and lightly toasted
Once the noodles are done, place the noodles onto the baking sheet surrounding the chicken
Sprinkle some fire roasted tomatoes and chopped basil around the noodles and chicken
