Oh My Darlin’, Oh My Darlin’, Oh My Darlin’ Clementine…
A great old lovesong, right? Here is a simple treat for your sweetie that uses Clementines (or Mandarins). It’s easier than you think and leaves a lasting impression.
- ½ cup powdered sugar
- 1 cup butter
- 1 ½ c + ½ c flour
- 4 eggs
- 2 c sugar
- 1/2 c clementine or mandarin juice
- 1Tbsp orange zest
- ½ tsp baking powder
Preheat oven to 350F. Cream together butter and sugar, and combine with 1 ½ cups flour. Line an 8 x 8 pan with parchment paper and press into the pan. Bake for 20 minutes until crust lightly browns.
In a bowl, whisk together eggs, sugar, juice and zest. Add ½ cup flour and baking powder and beat until all the lumps have been removed. Pour over the top of the crust and place back in the oven.
Bake for 20-25 minutes until it has set, allow bars to cool and dust with powdered sugar.
