This is a delightful and refreshing dish to make for summer picnics, pot lucks and even those fun evens like Concerts in the Park! It’s SUPER easy to make and delightfully fun to have the kids help with. Only 6 Smart Points Per Serving!
Carrot Salad
Ingredients
2 cups coarsely grated carrots
⅔ cup raisins
1 cup crushed pineapple drained
⅓ cup mayonnaise or miracle whip – use LIGHT to make it healthier!
1 tbsp lemon juice
Pinch of salt
Directions
Toss raisins, carrots, and pineapple together lightly; set aside.
Stir together mayonnaise, lemon juice, and salt and add to the raisin mixture.
Refrigerate until served.
Best if made in advance and refrigerated at least an hour … then rip into it like a monkey on a cupcake!
