I LOVE the concept of cook once, eat twice. Even better if it is three or four times, LOL!
A few days ago, I popped 2 packs of split breasts into the crock pot over night with some mild seasoning. We already enjoyed one chicken dinner off of that, and this afternoon I shredded the other four breasts.
What did I do with all of that?
- Chicken Enchiladas
- Chicken Chili
- Chicken Broccoli Crepes (shredded chicken in a thick cream of chicken soup with diced frozen broccoli and a hint of marjoram inside, topped with the last of my shredded provolone)
- Chicken in Gravy (for hot sandwiches on a bun)
- Chicken Quiche Filling (with bacon, onion and shredded cheddar)
That’s a lot of mileage off of 6 chicken breasts — 6 meals with leftovers!
The enchiladas looked so good that they will be for dinner tonight — my Mother In Law is under the weather so we are not going out. The chili will be for later this week, along with the hot sammies. Quiche filling is in the freezer for NEXT week and the crepes are already assembled/ ready to bake off and in the freezer too.
I almost forgot — while I was waiting for things to cool — I whipped up some creamed chip beef for the hubster to take to work this week. He LOVES it over toast.
I think it is the cooler weather…I am really on a roll, LOL!
Speaking of rolls – later this week, I think I need to make some homemade bread. Wouldn’t that be great with some of the apple butter we made earlier this fall? Yum!
