As part of clean eating month, it’s been fun to recreate a few of our favorite conveinence foods that helps us save money and save our family from eating some of the “junk”.
This is another of those frugal, money-saving mixes you can make ahead of time that saves you all those nasty preservatives that are most package rice at the store!
Lemon-Dill Rice Mix
- 4 cups uncooked rice
- 1/4 Cup grated lemon peel
- 1/4 Cup powdered chicken soup base
- 2 Tbsp dill
- 1 Tbsp chives
- 1/2 tsp salt
Mix all ingredients together in a large bowl. Divide into 4 “zippy” bags and seal.
To use: Dump one bag into a pot. Add 2 cups liquid (water, broth, juice or a combination) and 1 Tbsp of butter. Bring to a rolling boil and then immediately reduce the heat to very low. Cover and simmer for 10-15 minutes, or until the liquid is absorbed.
