With Mom in the hospital, and all the running around that I had to do last week — dinner was one thing that I knew was under control.
I never got to the rest of the apples last week – so those are on the agenda this week. After the apples, I am looking at canning pumpkin puree — I shared that idea HERE two weeks ago.
One thing I did NOT do was get that Butternut Squash soup made. It’s a chicken broth base with a dash of sage — easy and yummy! I promise — I ‘ll share the recipe!
Breakfast will include:
– cold cereal
– Scrambled Eggs
– Crock Pot Oatmeal
– Fresh fruit (we have apples, bananas and mandarin oranges)
Tuesday – Fridge Clean Out
Wednesday – Meatless: spaghetti with marinara sauce, tossed salad
Thursday – Soup: Butternut Squash Soup with chicken salad sandwiches
Friday – Salad: Taco Salad (our version of it)
Saturday – Mystery Night: BBQ Chicken Quesadillas
Sunday – Grilled Steaks, Baked Acorn Squash, Green Beans
