Pistachio and Raspberry Cake Squares
2 Cups flour
1 Cup milk
1/4 Cup butter
1 Tsp baking powder
½ Cup applesauce
½ Cup raspberries
4 oz. pistachio
Preheat oven to 350ºF.
In a bowl mix the applesauce with the butter, the egg, and the baking powder.
Incorporate the flour and the milk alternating between the two of them.
Mix until everything is well incorporated.
Grease and flour a cake pan. Pour the batter into it and take to the oven.
Bake for 20 to 30 minutes or until done.
Remove from oven, set aside to cool.
Cut into squares.
Garnish with raspberries and pistachio.
Now rip into it like a monkey on a cupcake!
You can also drizzle it with a bit of icing made with equal parts milk and powdered sugar…but it really isn’t needed.
