7 Recipes for When Chicken is on Sale

What to do when chicken is on sale? Checking out all the sales fliers this week, the chicken looks like the big deal. Hyvee has split breasts for $.88 a pound which hands down, beats the other stores!

What to do when Chicken is on Sale?

It always makes sense to stock up when you are at the lowest price you can find in a selling cycle! I plan on getting about 20 pounds of it and doing the following:

Baked Chicken Breasts

Make a light breading of flour and seasoning salt. Rinse off 5 pounds of the chicken breasts, pat dry, roll in breading, and place on a baking sheet. I will bake it at 350 for about an hour. You now have plenty of baked chicken for lunches, picnics, or a nice Sunday dinner! Keep in mind, depending on the size, this could be 4-6 breasts as they are bone-in. We aren’t talking about 20 breasts cooked and staring at you in the fridge

Pulled / Shredded Chicken

Next, I will bake five pounds of chicken breasts on a jelly roll pan with a little water in the bottom. The trick is to cover them with foil and bake at 300 degrees for about 2 hours. Then you remove them from the oven and let the chicken cool. Pull off the skin and take a fork, shred the chicken off the bone, and put it into smaller containers that would roughly feed 4 people when you add a little something to it.

Repeat this with another pan of chicken…

Here is another way to bulk cook chicken:

Slow Cook It

Four to five pounds can go in the crockpot / slow cooker and rip on low for 8 hours. Do the same as you did with the oven, cool the chicken, and shred it! Keep in mind you can do this overnight – so you are prepping family meals while you sleep!

Now, what are you going to do with all that shredded chicken? I already had chicken chili and chicken enchilada recipes on here for you in previous posts…but let’s look at a little Southwestern Twist:

Combine 1 package of taco seasoning with two cups of water and blend well. Pour ½ cup of liquid over each of four containers of shredded chicken. Freeze containers. here are a few more ideas:

Chicken Recipes:

Fajita Chicken

Pull one container of taco-seasoned shredded chicken out of the freezer & simply microwave with one sliced onion and one sliced pepper until the meat is warmed up and the pepper is tender. Enhance with your tortillas, cheese, sour cream, salsa, etc.

Chicken Taco Salad

Take one of those taco-seasoned shredded chicken packs and warm the chicken in the microwave. Pour it over taco chips and then add lettuce, tomatoes, olives, sour cream, etc.

Chicken Stroganoff

Take a pack of plain shredded chicken and add a can of cream of chicken soup and 1 cup of sour cream. Heat in the microwave until heated through. Pour over noodles or rice. Optional: add a can of mixed vegetables for variety.

Chicken Noodle Soup

Take a pack of plain shredded chicken and add a quart of chicken broth, a bag of frozen veggies, and a bag of Reames frozen egg noodles in a large pot. Add a pinch of marjoram and simmer for about 10 minutes then dig in!

Chicken Biscuit roll-up

Take a pack of plain shredded chicken and some shredded cheddar cheese. Combine them so that you have 1 cup of chicken for each half cup of cheese. Place 1½ TB of mixture between 2 halves of a biscuit. Pinch edges together & bake per biscuit instructions.

Shredded Chicken w/ BBQ sauce

Take a pack of plain shredded chicken and in a separate bowl combine 1 C ketchup, 1 C BBQ sauce, 1 TB brown sugar, and 1 tsp mustard. Pour over shredded chicken and heat through. Serve on a bun.
**This is a great recipe to dump all ingredients into a Ziploc bag and pop into the freezer for future use – like popping into a crockpot.

And one of our favorites for when chicken is on sale…CRANAPPLE CHICKEN

Take a pack of plain shredded chicken and place it in a microwaveable dish.
In a separate bowl combine:
1 can (8 oz.) whole berry cranberry sauce, 1 1/2 tsp. butter, 2 tbsp. brown sugar and 1 can (13 1/2 oz.) pineapple tidbits, well-drained.
Pour cranberry pineapple sauce over the chicken. Place dish in the microwave and cook for 4-6 minutes – until heated through. This is great with rice!
