I am so excited! I just planted my tomatoes in my summer garden and am looking forward to all the great recipes I can make with those heirloom ‘maters! This particular soup came to mind and we just had to have it — Tomato Bisque Soup with Basil. It’s heaven in a bowl — you only need your friend the spoon to share it with.
You will need:
- 4 cans fire roasted tomatoes
4 tbsp. dried onion powder
1 tbsp. of diced garlic in a jar
2 tsp. garlic powder
2 tbsp. of minced basil
1 tbsp. unsalted butter
4 cups vegetable broth
Add your tomatoes and diced garlic into a blender
Puree for 2 minutes until smooth
Add your tomatoes, broth, dried onion, garlic powder, and butter in large stock pot.
Bring to a boil then reduce to low
Cook on low for 30 minutes.
Add minced basil leaves, blend with stick blender until.
Garnish with parmesan cheese
