When you have a LOT of potatoes…

They are SUPER inexpensive this time of year — I think I paid $1.19 for a TEN POUND bag at Aldi this week. That makes them $0.12 a pound.
Talk about a GREAT way to stretch your budget!

Now, you don’t want them just sitting around, get busy with them!
Peel them…Yes, ALL of them…keeping the peeled ones in a bowl of water to help keep them from turning “rust” colored as they oxidize.Pretty right?Now, start to diced them…Again, keeping them in that bowl of water…First things first – soup is a GREAT way to make them go super far — my all time favorite recipe?
 Autumn Chowder

Just look at it — it’s basically a potato soup with carrots, corn, onion, bacon and cheddar cheese…. yum!
You could also make Crock Pot Potato Soup or Swiss Potato Soup.

Then, how about boiling some of those to make mashed potatoes? You CAN freeze them, in zippy bags and simply that/heat for later use! My Mashed Potato Recipe is here

What else can you do?

-Grate them for hash browns and potato pancakes. Hash browns can be used for Baked Hashbrown Casserole
-Make potato salad. Boil off the cubes, cool them and add a simple dressing.
-Make Country Fries…toss some cubes or wedges in olive oil and your favorite seasoning then bake in the oven at 350 for about 30 minuets.
-Make Twice Baked potatoes. You scrub and bake potatoes, then cut in half and scoop out the insides, being careful to save the “shell”. Add bacon, cheese, etc. to the innards and spoon them back into the shells. You are ready to bake off or freeze for a future use!
