Lentils are a great meal replacement in so many ways. Besides being super tasty, lentils have no saturated fats or cholesterol and they pack 26 grams of protein per cup! I’m talking about the red lentil variety that is most common at your local grocery store.

Lentils rock! They help to lower cholesterol. The fiber in lentils helps to keep your blood sugar from rising too fast after a meal. Among other nutrients, 1 cup of lentils provides you with 30% of your daily requirement of protein. And they’re high in iron (foliate).

Dry lentils also last for a couple of years. That is the main reason many “preppers” love to stock up on them – with a few cups water they know they have a great source of filling dietary fiber without the extra cost that freeze-dried meat brings to their budget.

If you want to use lentils for beef or turkey substitution in your favorite recipes, look for lentils that are green or even brown lentils. These have a slightly different flavor and will take a little longer to cook than the red lentils.

Where did I get the recipe for these Vegan Lentil Sloppy Joes?

This vegan sloppy Joes recipe comes from a friend who made it for one of our weekend scrapbooking crops. I was intrigued to try it and was pleasantly surprised! It was VERY savory and based on lentils.

I did tweak her recipe a bit. Removing some and pureeing them, then adding them back to the batch, helps hold it together better and stick to the bun better. It is also harder for my dear husband to realize that there is no meat in it!

How is this recipe healthy?

No oil, no maple syrup, no ground beef, no canned spaghetti sauce that is loaded with hidden sugar.Skip the sodium overload in soy sauce too! Just enough great ingredients to make a tangy sauce from what most people consider pantry staples. That is one of my favorite things about this sloppy Joe sauce – you will have your cooked lentils on the dinner table before you know it!

This recipe twist on the American Classic is SUPER easy – all you have to do is toss into a crockpot and let rip overnight, remove some to blend, and add it back into the main mixture. Freeze half the batch right away, so you don’t end up wasting any because it makes a very generous batch! 

Why doesn’t the recipe have green pepper in it?

First of all, I am allergic to green bell pepper – but it would also overpower the lentils too much.

What kind of bun do I like this on?

I tend to go with halved whole wheat hamburger buns – but I love the extra crunch in whole grain type of bread.

Lentil Sloppy Joe Recipe

You will need:

  • 1 c. dried, red lentils (rinsed) (or mix 50/50 with organic green lentils)
  • 2 c. boiling water
  • 1 1/2 c. celery, finely chopped
  • 1 1/2 c. carrots, finely chopped
  • 1 large onion, finely chopped – red onion will make it sweeter
  • 3/4 c. ketchup or a small can of tomato paste mixed with a can of water
  • 2 T. Vegan Worcestershire sauce
  • 2 T. brown sugar
  • 2 T. cider vinegar
  • Hamburger buns

How to Cook Lentils in a Crockpot:

In your large slow cooker, put all items and mix well. Cover and cook on low for 10-12 hours, or high for 4-6 hours. If you do it overnight, you wake up to a fantastic smell! When lentils are tender to the taste, remove half of the mix and blend to a mild paste then add it back to the pot. Serve your lentil sloppy Joes on those buns and enjoy!

What do you do if you have any leftovers from this healthy sloppy joes recipe?

Great question! Store them in an airtight container and place them in the fridge. They should stay fresh for up to four days, so you can take any leftovers straight from the refrigerator to your lunchbox or make a quick sloppy joes sandwich later on.

Now, if you are on Weight Watchers? This baby has only 1 FreeStyle SmartPoint per 1/3 cup serving of mixture (without a bun). It really is good enough to eat without a bun, but more filling with it.
